Frittata Recipe

Try this easy brunch dish - a frittata. It's essentially an Italian quiche without the crust, which makes it quick to prepare.





1 each green, yellow and red bell peppers, diced
10 eggs
1 tsp fresh rosemary
1 tsp fresh thyme
4 oz. smoked Gouda cheese
1/2 onion, diced
Olive oil


Notes on Preparation


Crack eggs on the bottom of the bowl to prevent wayward shells from falling into your mix.




Preheat oven to 350 degrees.


Whip the eggs with a whisk until thoroughly blended. Add diced peppers. Add in fresh herbs and next cheese, followed by the onion. Mix well so everything is well coated. Add a pinch of salt and a few dashes of pepper.


If you would like, you could add red pepper flakes.


In a baking dish, add olive oil to coat the bottom of the pan. Pour in your fritatta mix. Bake for 20 minutes.


Remove from oven and transfer to serving dish if you'd like. Consider garnishing with ingredients from the fritatta like fresh herbs, or peppers.
