Aisha's Granola Recipe

Aisha's Granola from UW Health dietitians is a healthy and delicious addition to any breakfast.

Sprinkled on plain yogurt, homemade granola can be a delicious addition to a healthy breakfast.

4 cups raw “old fashioned” oats
½ cup canola oil
½ cup honey (mixed with 1/8 cup warm water) or maple syrup. I’ve also used molasses in the past
2 teaspoons vanilla
2 tablespoons cinnamon
¼ teaspoon ground cardamom (optional)
¼ teaspoon ground cloves (optional)
¼ teaspoon ground nutmeg (optional)
½ teaspoon salt (optional)
1 cup pecans and/or almonds, roughly chopped
½ cup dried fruit

Notes on Preparation

If you bake the dried fruit, it gets very cruchy. Wait until after the granola has been baked and removed from the oven before adding.

Preheat oven to 300 degrees.

Mix dry ingredients and wet ingredients separately, and then combine. Bake 30 minutes, stirring every 10 minutes. If after 30 minutes the granola is not golden brown, turn up temperature to 350 degrees and check every 5 minutes. Remove from oven. Add dried fruit. Once completely cool, store in an airtight container.
