Chicken Cordon Bleu

Serves 4



  • 4 chicken breast halves, boneless, skinless (4 oz. each)
  • ¼ tsp. pepper
  • 2 slices ham, 97% fat-free (cut in halves)
  • ¾ cup (3 oz.) part-skim mozzarella cheese, shredded
  • ½ cup cornflakes cereal, crushed
  • ½ tsp. paprika
  • ¼ tsp. garlic powder
  • 1/3 cup skim milk


  1. Preheat oven to 350 degrees. Spray an 11 x 7 x 2-inch baking dish with non-stick cooking spray. Place each piece of chicken between 2 sheets of heavy-duty plastic wrap. Flatten to ¼-inch thickness using meat mallet or rolling pin. Sprinkle each piece with pepper. Top each flattened piece with a slice of ham and 3 Tbsp. shredded cheese. Roll-up jelly roll fashion. Tuck in sides and secure each roll with wooden toothpicks.

  2. In shallow dish, combine cornflakes, paprika and garlic powder. Dip each roll in milk and dredge in cornflake mixture. Place rolls in prepared baking dish and bake 30 minutes or until done. Discard toothpicks before serving.
