White Bean, Kale and Sausage

Serves 6

 

Ingredients

  • 1 pound ground turkey
  • 2 cans no-salt added, cannellini beans (drained)
  • 1 large bunch of spinach or kale, chopped
  • 2 gloves garlic
  • 2 teaspoon olive oil
  • 1 teaspoon oregano
  • 2 teaspoon dried basil
  • 1 tablespoon balsamic vinegar

Directions

 

  1. Sauté garlic in olive oil. Add ground turkey, oregano and basil. Cook 5 minutes or until done. Add cannellini beans and kale or spinach. Cover to let greens wilt. Cook 5 minutes. Remove from heat. Stir in vinegar.
