  • 6 cucumbers, peeled, seeded and diced 
  • 4 Roma tomatoes, seeded and diced 
  • 5 green onions, sliced 
  • 1 red bell pepper, seeded and diced 
  • â?? cup chopped garlic 
  • 1 cup fresh parsley, chopped 
  • ½ cup fresh mint, minced 
  • ½ cup olive oil 
  • 1 Tbsp. lemon zest 
  • 2 Tbsp. fresh lemon juice 
  • 1 Tbsp. salt 
  • 1 Tbsp. Black pepper 



  1. In a large bowl, combine cucumbers, tomatoes, onions, garlic, parsley, and mint. 
  2. Add olive oil, lemon zest, lemon juice to salad and toss to coat. Season with salt and pepper. 

 Serves 6
