Maple Delicata Squash

This recipe is entirely flexible based on your needs. The more guests at dinner, the more squash you can prepare. A serving size of cooked squash is 1/2 cup.



  • Delicata squash
  • Olive oil
  • Maple syrup


  1. Peel and remove seeds/fibers. Cut into chunks and place into a baking dish. Drizzle olive oil and maple syrup over the squash and mix. Roast in oven at 425 degrees for approximately 15-20 minutes, or until tender.
