Golden Cauliflower

Serves 6



  • 2 Tbsp olive oil
  • One head of cauliflower, cleaned and cut into small florets
  • 1 Tbsp garam masala
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp turmeric
  • 1 ½ cups reduced sodium chicken or vegetable broth
  • 3 Tbsp tomato paste


  1. Heat 1 Tbsp olive oil in a large skillet over moderate heat and add cauliflower. Stir frequently until lightly browned and tender, 15-20 minutes, covering the pan as needed to keep moisture in. Remove cauliflower from pan and set aside.

  2. Return pan to heat and add remaining Tbsp of olive oil. Add spice and stir for 30 seconds. Add vegetable stock and tomato paste and stir to blend, simmer for 1-2 minutes. Return cauliflower to pan and stir for 2-3 minutes to heat through.
