Gluten-Free Carrot Cake

Carrot Cake (Gluten Free Recipe)

A delicious cake that is perfect for potlucks or even on the go.

 

Ingredients

  • 4 eggs
  • 3/4 cup oil
  • 2 cups sugar
  • 12 oz Gerber baby food #3
  • 2 cups gluten-free flour mix
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 cup ground walnuts

Directions

  1. Pre-heat oven to 350 degrees.

  2. Beat eggs, oil and sugar. Add baby food.

  3. Mix the flour, salt, baking soda and cinnamon. Add to the carrot mixture.

  4. Add walnuts and bake in 13x9" pan for 40 minutes.
