Gluten-Free Carrot Cake
A delicious cake that is perfect for potlucks or even on the go.
- 4 eggs
- 3/4 cup oil
- 2 cups sugar
- 12 oz Gerber baby food #3
- 2 cups gluten-free flour mix
- 1 teaspoon salt
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 cup ground walnuts
- Pre-heat oven to 350 degrees.
- Beat eggs, oil and sugar. Add baby food.
- Mix the flour, salt, baking soda and cinnamon. Add to the carrot mixture.
- Add walnuts and bake in 13x9" pan for 40 minutes.
