Dilled Yogurt

 

The following recipe makes a delicious and refreshing accompaniment to a Mediterranean-themed meal.

 

Ingredients

Dilled Yogurt (Gluten Free Recipe)

  • 1 large cucumber (grated)
  • 1/4 tsp salt
  • 16 oz Greek style yogurt
  • 1 oz fresh chopped dill
  • Salt and pepper to taste

 

Directions

  1. Grate cucumber using a large box grater.
  2. Add salt to the grated cucumber and let drain for at least 1 hour to remove excess liquid from the cucumber.
  3. Place yogurt into a cheese clothed lined strainer and let drain over night. This will remove any excess liquid from the yogurt.
  4. The next day place the yogurt, cucumber and fresh chopped dill into a bowl and season with salt and pepper to taste.
