Blueberry Sauce

Serve this healthful flavorful sauce on French toast, pancakes, or ice cream.


Serves 6



  • 2 cups fresh or frozen blueberries
  • 1 cup orange juice
  • 1/4 cup Splenda or sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • dash cinnamon
  • 1/2 teaspoon vanilla



  1. In a medium saucepan, combine blueberries, orange juice, Splenda or sugar. Combine cornstarch and water. Stir to mix. Add to saucepan. Bring to a rolling boil while stirring occasionally. Remove from heat. Adjust sweetness by adding additional Splenda or sugar to suit your taste. Add cinnamon and vanilla.

  2. If desired, puree sauce using a hand held immersion blender.
