Blueberry Banana Muffins

 

Ingredients

  • 1 ½ cups whole wheat flour
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp ground cinnamon
  • Pinch nutmeg
  • 2 large eggs
  • 2 Tbsp honey
  • 1 tsp pure vanilla extract
  • ¼ cup canola oil
  • ¾ cup orange or apple juice
  • 1 cup sliced bananas
  • ½ cup blueberries
  • Cooking spray
  • ¼ cup walnuts (optional)

Directions

 

Preheat oven to 400 degrees.

 

In a large bowl, whisk together flour, salt, baking powder, cinnamon and nutmeg. Make a hole in the center of the mixture and pour in the eggs, honey, vanilla, oil and juice. Mix the dry and wet ingredients together, just until combined. Gently fold in bananas and blueberries.

 

Line muffin pan with liners and coat with cooking spray. Fill each muffin liner three-quarters of the way full. Top with walnuts, if desired.

 

Bake for 10- 12 minutes, or until toothpick comes out clean. Serve warm or at room temperature or freeze until a later date.
