Black Bean Burgers


  • 1 can (15-ounce) black beans, drained and rinsed
  • 1 egg
  • 1 teaspoon cumin
  • 1 teaspoon minced garlic or 1/8 teaspoon garlic powder
  • ¼ cup chopped parsley or cilantro
  • ½ cup plain bread crumbs (whole wheat, if possible)
  • Salt and pepper to taste
  • Optional: ¼ cup salsa


  1. In a food processor, combine all ingredients. Briefly mix. Shape bean mixture into four patties. Patties will be very moist. Place dollops of the mixture on a plate and form patties with a spatula. Spray a non-stick skillet with cooking spray. Place patties in skillet and cook over medium heat until both sides are lightly browned and cooked through. Serve with guacamole, light sour cream or extra salsa if desired. Makes four servings.
