Arugula Salad

Serves 4

 

Ingredients

  • 8 oz arugula
  • 1 Anjou pear (peeled and diced ¼ inch)
  • 2 ounces of pomegranate seeds (4 tbsp.)
  • ½ cup mustard vinaigrette

Directions

  1. Toss arugula with vinaigrette (recipe below) and top with pomegranate seeds and pears.

 

Mustard Vinaigrette

 

Makes 1 quart 

  • 1 cup fresh squeezed orange juice
  • ½ cup dijon mustard
  • ¼ cup white vinegar
  • ¼ cup organic cane sugar
  • 2 cups canola oil

Directions

  1. Place orange juice, dijon mustard, white vinegar and cane sugar in a blender. Blend for 10 seconds. Leave blender on and slowly add the oil until well incorporated.
