Apple Walnut Date Tart

Serves 10




Date and Walnut Crust:

  • 1 ½ cups of dates, pitted
  • 2 ½ cups walnuts (shelled)



  • 1 lemon, juiced
  • 2 cups water
  • 3 granny smith apples, peeled and cored
  • ½ cup apple juice
  • 2 Tbsp. honey
  • ¼ dried cherries
  • ¼ tsp cinnamon
  • ¼ tsp allspice
  • 1/8 tsp ground cloves
  • Vanilla yogurt (optional)


  1. To make crust, place the pitted dates and walnuts in a food processor and pulse to a coarse texture. Remove the mixture from the processor and press into the bottom of a parchment lined spring form pan or tart pan. Refrigerate for 1 hour.

  2. To make filling, in a large bowl squeeze lemon juice in the water and set aside. Slice apples into ¼ inch slices and place in the water/juice mixture. Drain apples and place in a large skillet. Add apple juice, honey, dried cherries, cinnamon, allspice and cloves. Cook over medium heat for 10 minutes stirring frequently.

  3. Remove apples and the cherries with a slotted spoon and allow cooling. Reduce liquid in the pan by half and remove from heat and allow cooling. Arrange apples decoratively on top of the walnut date crust and brush with the liquid. Allow to cool for two hours before serving.

  4. Garnish with a dollop of vanilla yogurt (optional).
