Oatmeal Bars

3 oz quick cooking oats (full 1 cup)
2 Tbsp brown Sugar TwinTM
2/3 cup non-fat dry milk powder
1 tsp apple pie spice
½ tsp baking soda
½ tsp baking powder
¼ cup raisins
1 cup unsweetened applesauce
1 Tbsp vanilla extract
1 (8oz) package fat-free cream cheese
Sugar substitute to equal ¼ cup sugar
½ oz chopped pecans (2 Tbsp)
Preheat oven to 350°. In large bowl, combine oats, Brown Sugar Twin, dry milk powder, apple pie spice, baking soda, baking powder and raisins. Add applesauce and 2 tsp vanilla extract. Mix well to combine. Pour into 11" x 17" biscuit pan sprayed with butter flavored cooking spray. Bake 20-25 minutes or until lightly browned.
Cool 20 minutes in pan on wire rack. In medium bowl, stir cream cheese with spoon until soft. Add sugar substitute and remaining 1 tsp vanilla extract. Spread mixture over cooled oatmeal mixture. Sprinkle pecans evenly over top. Cut into 16 bars. Refrigerate leftovers.
Yield: 8 servings (serving size = 2 bars)
