Beef Stroganoff

1-2 tsp. olive or canola oil
8 oz. lean beef, cut in pieces (round, sirloin, tenderloin)
1 small onion, chopped
3 cups water
1/2 envelope dry French onion soup mix
4 oz. can sliced mushrooms, drained
4 oz. non-fat sour cream
1 1/2 Tbsp. cornstarch
In large skillet, add oil and brown beef and onion over medium-low heat. Add water, soup mix and mushrooms. Cover and simmer about one hour or until meat is tender. In small bowl, stir together sour cream and cornstarch. Blend into meat mixture and simmer until thickened. Serve over cooked noodles.
