Ketogenic Diet Recipes: Pumpkin Spice Latte

 

Ingredients:

  • ¼ cup pumpkin puree
  • 1 cup unsweetened coconut milk (not canned)
  • 2 ½ Tbsp. butter
  • 2 cups brewed coffee
  • ½ tsp. vanilla extract
  • 1 ½ Tbsp. heavy whipping cream
  • 3 Tbsp. sugar-free pumpkin pie syrup

Directions:

 

In a medium saucepan, heat pumpkin, milk and butter over medium-low heat.  Once simmering, add coffee and mix together. Remove from the stove, add vanilla extract, cream and pumpkin pie syrup. Use an immersion blender to mix. Add stevia to sweeten, if necessary.

 

Makes 3 servings (~1 ¼ cups per serving)
