Ketogenic Diet Recipes: Low Carb Mashed Potatoes
- 1 medium head cauliflower
- ¼ cup butter
- 2 Tbsp. sour cream
- ¼ tsp. garlic salt
- 1 pinch ground black pepper
- Chives, cheese, bacon bits, optional
- Bring one cup of water to simmer over medium-high heat.
- Separate cauliflower into florets. Cook in simmering water until very tender. Drain water and add butter, sour cream, salt and ground black pepper.
- Mash using a hand mixer, until smooth.
- Serve with toppings of choice.
Makes 8 servings (~ ½ cup per serving)
