Ketogenic Diet Recipes: Low Carb Mashed Potatoes

 

Ingredients:

  • 1 medium head cauliflower
  • ¼ cup butter
  • 2 Tbsp. sour cream
  • ¼ tsp. garlic salt
  • 1 pinch ground black pepper
  • Chives, cheese, bacon bits, optional

Directions:

  1. Bring one cup of water to simmer over medium-high heat.
  2. Separate cauliflower into florets. Cook in simmering water until very tender. Drain water and add butter, sour cream, salt and ground black pepper.
  3. Mash using a hand mixer, until smooth.
  4. Serve with toppings of choice.

Makes 8 servings (~ ½ cup per serving)
