Whiskey Braised Tenderloin Recipe
In Cooking Outside the Box, Chef John features a very simple but elegant dish of whiskey braised tenderloin. With just a few ingredients, you can prepare a dish that is sure to impress.
According to Chef, you don't want to overdo this dish. It's delicious in its simplicity and doesn't need a lot of extras.
4 - 4oz beef tenderloin filets
1 oz olive oil
3 oz whiskey
Add salt and pepper to the tenderloin filets.
Add olive oil to a hot saute pan, and add the tenderloin. Let the filets cook for approximately 2 minutes per side. To cook to medium, it will take about 6-7 minutes.
The meat is a little thicker, so you may have to adjust your heat so it cooks thoroughly. Look for a nice carmelization or browning. Once it has begun to brown, add the whiskey.
CAUTION - The alcohol will cause a flame. Tip the saute pan away from yourself when you add the whiskey and do not try to blow out the flames. And do not put your face over the pan. Just let the flames cook out. If you have a low hanging range hood, reduce the amount of whiskey you add so the flames don't get quite as high.
As soon as the flames go out, cover the pan and let it braise to infuse the flavors into the beef. Let cook for 1-2 more minutes.
Once the beef is cooked, keep the plating simple. Place the tenderloins on a plate for serving and drizzle over the drippings from the pan.
