Greek Chicken with Fruited Couscous Recipe

4- 4oz boneless skinless chicken breasts
4 oz feta cheese
1 oz fresh oregano
Zest of 1 lemon
4 oz Greek yogurt
2 cloves garlic diced fine
1 Tbsp olive oil
1/2 cup couscous
1-1/2 cups water
3 dried apricots
1/4 cup raisins
1/2 onion diced
Fillet chicken breasts, stuff with 1 oz feta each, 1/4 oz oregano and 1/4 lemon zest. Fold breast closed.
Heat oil in a sauté pan and cook chicken to 160 degrees, remove from heat and let rest 5 minutes covered.
In a small bowl combine yogurt and garlic.
In a sauce pan bring water to a boil, add couscous, apricots, raisins and onion, cover and turn heat off, let sit for 5 minutes, fluff with a fork.
To serve place 1/4 of the couscous in the center of a plate, place one serving of chicken on top add a dollop of yogurt to the chicken.
