Greek Chicken with Fruited Couscous Recipe

Simple to prepare and delicious, it's an easy choice for a weeknight meal.

 

Serves 4

 

Ingredients

Greek Chicken
 
  • 4- 4oz boneless skinless chicken breasts
  • 4 oz feta cheese
  • 1 oz fresh oregano
  • Zest of 1 lemon
  • 4 oz Greek yogurt
  • 2 cloves garlic diced fine
  • 1 Tbsp olive oil
  • salt
  • pepper
  • 1/2 cup couscous
  • 1-1/2 cups water
  • 3 dried apricots
  • 1/4 cup raisins
  • 1/2 onion diced

 

Directions

  1. Fillet chicken breasts, stuff with 1 oz feta each, 1/4 oz oregano and 1/4 lemon zest. Fold breast closed.
  2. Heat oil in a sauté pan and cook chicken to 160 degrees, remove from heat and let rest 5 minutes covered.
  3. In a small bowl combine yogurt and garlic.
  4. In a sauce pan bring water to a boil, add couscous, apricots, raisins and onion, cover and turn heat off, let sit for 5 minutes, fluff with a fork.
  5. To serve place 1/4 of the couscous in the center of a plate, place one serving of chicken on top add a dollop of yogurt to the chicken.
