Fruit Soup Recipe

On a hot summer day, you might not crave soup, unless it's Chef John's Fruit Soup. Delicious and perfect for a first course or even a light main dish.
A Few Notes on Preparation
- Use a serrated knife when trimming the cantaloupe
- You can use a blender or food processor to prepare the soup
Ingredients
1 whole cantaloupe, cleaned and diced
1 oz basil, leaves trimmed (or chiffonade the leaves)
1 - 2 tsp honey (depending on how sweet your cantaloupe is)
1 lemon cut into quarters
1/2 tsp olive oil
Black pepper - ground
Pinch salt
2 tablespoons heavy cream
Directions
Add the cantaloupe, basil, and honey to the food processor or blender. Squeeze one of the lemon quarters over the mix. Add olive oil, fresh ground pepper, and a pinch of salt. Blend until almost smooth. Leave it a slightly chunky so there is more texture to the soup. Pour into bowls. Drizzle heavy cream over the top of the soup.
