Firecracker Shrimp Recipe
In Cooking Outside the Box, Chef John features a shrimp dish with a spicy Thai twist. Firecracker Shrimp combines exotic flavors in a simple dish that is easy to prepare and delicious.
For this dish, consider serving with rice on the side. If you do, you can prepare the rice in advance so it is ready when the shrimp is ready.
One hint when cooking shrimp, when it is a "C" shape it is done, if it is an "O" shape, it is overdone.

1 lb shrimp, peeled and devained
4 cloves garlic chopped
2 tablespoons fresh ginger chopped into matchsticks
¼ cup fresh mint, roughly chopped
¼ cup cilantro, roughly chopped
2 green onions, sliced
Juice of one lemon (can use lime if you prefer)
1 tablespoon fish sauce
2 tablespoons olive oil
1 tablespoon sesame oil
Thai chilies to taste
Set aside a small amount of the mint, cilantro and onion for garnish later in the preparation.
Use a deep pan, such as a wok. Heat the pan, then add the olive oil and sesame oil.
Add garlic and ginger and sauté for 30-40 seconds. Add shrimp. Add onions, cilantro and mint. Squeeze the juice of one lemon over the top. Crumble in the desired amount of Thai chiles. Next add the fish sauce. Gently stir.
Cook until shrimp is done, when the shrimp is light pink.
If you prepared rice, spoon some rice into a serving bowl and top with the cooked shrimp. Garnish with the mint, cilantro and onion you set aside earlier.
