Crustless Cranberry Pie
1 cup flour
1 cup sugar
1/4 teaspoon salt
2 cups fresh cranberries, chopped or cut in halves
3/4 cup chopped walnuts
1/2 cup butter or margarine, melted
2 eggs, lightly beaten
1 teaspoon almond extract
Butter a 9 inch pie pan. Preheat oven to 350 degrees.
In a large bowl, combine flour, sugar, and salt. Add chopped cranberries and nuts. Stir to mix.
In a small bowl, combine melted butter, beaten eggs, and almond extract. Add to flour and cranberries. Stir to mix well. Spread the thick batter into the prepared pie pan.
Bake for 40 - 45 minutes or just until beginning to brown and set in the middle.
Serve with whipped cream or ice cream if desired.
