Chicken Creole
Ingredients
- Four boneless chicken breasts, browned
- ½ cup chopped onion
- ½ cup chopped green pepper
- ¼ cup chopped celery
- One can (8 ounces) stewed tomatoes
- One can (4 ounces) sliced mushrooms
- ¼ teaspoon thyme
- Two tablespoons quick-cooking tapioca
Directions
- Place chicken in slow cooker
- Mix remaining ingredients and pour over chicken
- Cover and cook on low for 6-8 hours
- Serve over rice
