Chicken Creole

Chicken CreoleIngredients

  • Four boneless chicken breasts, browned
  • ½ cup chopped onion
  • ½ cup chopped green pepper
  • ¼ cup chopped celery
  • One can (8 ounces) stewed tomatoes
  • One can (4 ounces) sliced mushrooms
  • ¼ teaspoon thyme
  • Two tablespoons quick-cooking tapioca

Directions

  • Place chicken in slow cooker
  • Mix remaining ingredients and pour over chicken
  • Cover and cook on low for 6-8 hours
  • Serve over rice
