Butternut Squash Mash


  • 1 Butternut squash
  • 1 Tablespoons skim milk
  • 1 Tablespoon Greek yogurt
  • Cinnamon (to taste)
  • Brown sugar (to taste)



Peel the squash and remove the seeds/fibers.  Cut into chunks and steam until tender.  Place in a medium bowl and add 2 tablespoons of skim milk and puree.  Add more skim milk as needed.  Next add 1 tablespoon of plain Greek yogurt.   Lastly, add cinnamon and brown sugar to taste.
