Chicken and Fruit Salad |
In a large bowl, toss chicken, pineapple chunks, oranges, celery, grapes and half of the pecans
(optional). In a separate bowl, mix low-fat mayonnaise, salt and pepper. Gently stir mayonnaise mixture into chicken mixture. Cover and chill in refrigerator. To serve, scoop 2/3 cup of the chicken mixture onto 1 cup of lettuce leaves. Sprinkle the remaining pecans on top of chicken mixture (optional).
