Ingredients
6 oz. Tofu
6 eggs
1 c. coarsely chopped bean sprouts
1/2 c. celery, minced
3 Tbsp. grated Parmesan cheese
2 Tbsp. soy sauce
2 green onions, chopped
1/4 c. parsley, chopped
1 tsp. sesame oil
Place tofu in a small bowl and mash with a fork until pieces resemble cottage cheese. In a larger bowl, beat eggs until fluffy.
Add mashed tofu, bean sprouts, celery. Parmesan cheese, soy sauce, green onions and 2 Tbsp. chopped parsley to eggs. Mix well.
Heat oil in a skillet until quite hot. Drop egg batter by tablespoons into oil. Turn over when the bottom is lightly browned, brown the second side and serve immediately.
Fast Fact:
Keep Mori-Nu tofu on hand- it is available in "juice box" packaging that can be stored in the cupboard.
