Granola Cupcakes
Shopping List:
Unsalted butter or margarine
Honey
Oatmeal
Unsweetened crispy rice cereal
Sesame seeds
Mixed dried fruit
Shelled pecans, nuts or peanuts
Paper baking cups
Ingredients
7 Tbsp. unsalted butter or margarine
3/8 c. honey
1 3/4 c. oatmeal
1 3/4 c. unsweetened crispy rice cereal
1 Tbsp. sesame seeds
3 1/2 oz. mixed dried fruit
1/3 c. shelled pecans, nuts or peanuts, chopped
Melt the butter and honey in a small pan over low heat or microwave in a small bowl. Mix the oatmeal, crispy rice, sesame seeds, dried fruit and chopped nuts together in a bowl; add the melted butter and honey, stir to combine.
Spoon the mixture into 12 paper baking cups and press down well. Let cool before serving.
TIP: This is easy enough for even young kids to make with adult supervision.
