Magic Meatloaf

1 ½ # lean ground beef 
1 egg beaten
¼ cup milk
1 ½ tsp. salt (or less if desired)
2 slices bread, crumbled
½ small onion, chopped
2 Tbsp. chopped celery
2 Tbsp. chopped green pepper
4-6 potatoes cut in pieces (if desired)
Mix egg, milk, salt and breadcrumbs, allow to soften. Thoroughly combine with ground beef and add chopped onion, celery and green pepper. Shape into loaf and place in slow cooker. Top with catsup and green pepper rings. Spray potatoes with non-stick cooking spray to prevent darkening and place potatoes along sides of loaf. Cover and cook on high 1 hour, then turn to low and cook 8 to 9 hours. Slice leftovers, wrap and freeze to be reheated in the microwave.
