Chicken in a Pot

1- 3# chicken, skinless, whole or in cut pieces 
2 carrots, sliced
2 onions, sliced
2 celery stalks with leaves, cut into 1 inch pcs
2 tsp. salt (or less if desired)
½ tsp. pepper
½ cup water or chicken broth
½ - 1 tsp of basil
Place carrots, onion and celery in bottom of slow cooker. Add chicken. Top with salt and pepper and liquid. Sprinkle basil over the top. Cover and cook on low 7 – 10 hours.
