Pumpkin Bread

Mix all dry ingredients thoroughly:
3 1/3 cups flour (may use up to 1 cup whole wheat and/or oat flour)
2 tsp. baking soda
½ tsp. salt
3 tsp. ground cinnamon
3 tsp. ground nutmeg
½ tsp. ground ginger
3 cups sugar*

Make a well in center of dry ingredients and add:
½ cup unsweetened applesauce
½ cup canola oil
8 egg whites or 4 whole eggs
2/3 cup water
2 cups canned pumpkin
Yield: 2 loaves (about 16 slices per loaf)
 
Mix thoroughly and pour into loaf pans, sprayed with non-stick cooking spray and coated with flour. Bake at 350 degrees about one hour.

 

*May substitute SplendaTM for all or part of sugar.
