Perfect Parmesan Sauce
½ cup onion, finely chopped
½ cup low-fat, sodium-reduced chicken broth
1 clove garlic, minced
2 tsp. margarine
2 Tbsp. flour
¼ cup skim milk
¾ tsp. basil
3 Tbsp. parmesan cheese, grated
1 Tbsp. parsley flakes
Melt margarine in skillet and sauté onion and garlic. Stir in flour until well blended. Gradually whisk in milk, broth and ¼ tsp. basil. Cook until slightly thickened, stirring constantly. Stir in parmesan cheese, remaining basil and parsley flakes.
Yield: About 1 cup (4 servings)
* Variation: Add one (6½ oz.) can drained clams for a quick sauce for pasta
