Perfect Parmesan Sauce

 

Serves 4

 

Ingredients

  • ½ cup onion, finely chopped
  • ½ cup low-fat, sodium-reduced chicken broth
  • 1 clove garlic, minced
  • 2 tsp. margarine
  • 2 Tbsp. flour
  • ¼ cup skim milk
  • ¾ tsp. basil
  • 3 Tbsp. parmesan cheese, grated
  • 1 Tbsp. parsley flakes
Instructions
  1. Melt margarine in skillet and sauté onion and garlic. Stir in flour until well blended. Gradually whisk in milk, broth and ¼ tsp. basil. Cook until slightly thickened, stirring constantly. Stir in parmesan cheese, remaining basil and parsley flakes. 
* Variation: Add one (6½ oz.) can drained clams for a quick sauce for pasta
