Oatmeal Cookies

1 cup all-purpose flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 Tbsp. vegetable shortening
¼ cup cinnamon applesauce
½ cup sugar*
½ cup brown sugar
¼ cup egg substitute or 1 whole egg
1 tsp. vanilla
1 1/3 cup rolled oats
½ cup raisins (optional)
Preheat oven to 375 degrees. Lightly spray cookie sheets with non-stick cooking spray. In large bowl combine flour, baking powder, baking soda and salt. In a separate bowl, whisk together shortening, applesauce, sugar, brown sugar, egg and vanilla until shortening breaks into pea size pieces.

Add flour mixture to the applesauce mixture. Mix well and fold in oats and raisins. Drop by rounded teaspoons onto prepared cookie sheet, 2 inches apart. Bake 10 to 12 minutes. Remove from oven and cool on cookie sheet for 5 minutes. Remove and place on cooling rack.
 
*May substitute SplendaTM for all or part of sugar.
