Oatmeal Bread
Combine and set aside for one hour:
1 cup oatmeal
1 Tbsp. margarine, room temperature
2 cups boiling water
Dissolve yeast in water: let sit for 5 to 10 minutes:
1/4 cup warm water
1 pkg. active dry yeast
Add to yeast mixture and mix with oatmeal mixture:
¼ cup molasses
¼ cup honey
1 ½ tsp. salt
5 cups flour (try 1 to 2 cups whole-wheat flour)
Yield: 2 loaves (about 16 slices per loaf)
Add flour to oatmeal mixture to make a stiff, sticky dough. Turn into greased bowl; cover. Let rise in warm place until doubled in bulk. Punch down; allow to rest. Divide in half; shape into loaves and place in greased 8 x 4-inch loaf pans. Let rise 45 minutes to one hour or until almost to top of pans. Bake at 350 degrees for 45 to 50 minutes.
