Ham with Peach Sauce

4 slices (3 oz.) ham, Dubuque 97% fat-freeTM
½ cup green pepper, chopped
2 green onions, chopped
2 cups sliced canned peaches (packed in juice), drained - reserving liquid
2 Tbsp. brown Sugar SplendaTM
1 tsp. cornstarch
1 Tbsp. catsup
1 tsp. lemon juice
Spray a large skillet with non-stick cooking spray. Over low heat, brown ham slices on both sides. Remove ham from skillet to platter, cover and keep warm. In same skillet, sauté green pepper and green onion until tender-crisp. In a small bowl, combine 1/3 cup peach juice, brown Sugar Splenda and cornstarch. Add to sautéed vegetables and mix well.
 
Continue cooking until mixture thickens. Blend in catsup and lemon juice. Add sliced peaches. Mix gently and continue cooking until peaches are heated through.
 
For each serving: Spoon about ½ cup peach sauce over one slice of ham.
