Grandpa Sam's Strawberry Syrup

1 ½ cups water, divided
1 (0.3 oz.) pkg. sugar-free strawberry flavored gelatin
1 (16 oz.) pkg. unsweetened frozen whole strawberries, halved
1 ½ Tbsp. cornstarch
Bring 1 cup water to a boil in a large saucepan. Add gelatin and stir well. Add strawberries and cook over medium-high heat for 5 minutes. Combine cornstarch and ½ cup water; stir well and add to strawberry mixture. Bring to a boil and cook 1 minute, stirring constantly.
 
Place 1 ½ cups mixture in container of an electric blender, cover and process until smooth. Pour puree into a bowl; stir in remaining strawberry mixture. Serve warm.
 
Yield: 3 cups (serving size = ¼ cup)
