Chocolate Chip Muffins

Mix together and make a well in center:
1 ½ cups all-purpose flour
½ cup whole wheat flour
1/3 cup sugar*
1/3 cup brown sugar
1/3 cup instant coffee powder (regular
or decaf.) or cocoa powder
2 tsp. baking powder
½ tsp. salt
Combine and add: Do Not Over Mix!
2/3 cup skim milk
¼ cup oil
¼ cup applesauce
½ cup egg whites (or 2 whole eggs),
lightly beaten
1 tsp. vanilla
Add:
1 cup chocolate chips

Yield: 12 muffins 

 

Pour into prepared muffin tins. Bake at 400 degrees for 15 to 18 minutes.

 

*May substitute SplendaTM for all or part of sugar.
