Chicken on a Diet
2 ½ pounds chicken pieces, skinned
1 ½ cups sugar-free orange-flavored carbonated beverage
¼ cup low-sodium soy sauce
Place chicken in a 13" x 9" x 2" baking dish. Combine orange beverage and soy sauce; pour over chicken. Cover and marinate in refrigerator for 8 hours, turning chicken occasionally.
Uncover and bake at 350° for one hour or until chicken is done, basting occasionally with soy sauce mixture.
Yield: 5 servings (serving size = 3 oz. chicken)
