A beautiful and elegant way to start any meal. The dressing made with raspberry vinegar, honey and allspice is absolutely wonderful served with leaf lettuce, strawberries, blueberries, and nuts. Other fresh fruit can be used as substitutes for the berries.

 

Ingredients

 

8 cups leafy green lettuce

1 cup fresh strawberries

1/2 cup fresh blueberries

1/3 cup macadamia nuts or nuts of your choice

 

Dressing

1/2 cup raspberry vinegar

1 tablespoon Dijon mustard

2 tablespoon sugar

2 tablespoon Splenda or additional sugar

1 tablespoon honey

1/4 teaspoon allspice

2 tablespoons olive oil

Arrange lettuce, berries, and nuts on individual serving plates. Set aside.

 

Combine vinegar, mustard, sugar, honey, allspice, and olive oil in a small bowl or jar. Using a hand held blender, mix until smooth. Drizzle desired amount of dressing over each salad.
