Donna's Chocolate Silk Pie

Melted chocolate is blended with tofu and a touch of honey to make a smooth delectable chocolate pie. Don't tell anyone and they will never know there is tofu in this dessert. If you love chocolate, this may turn out to be your very favorite dessert.

 

Ingredients

Crust

1 cup graham cracker crumbs

1/4 cup sugar

3 tablespoons butter or margarine

 

Filling

1 cup chocolate chips, melted

12 ounces low fat, firm tofu, drained

1 tablespoon honey

3 tablespoons powdered sugar

1 teaspoon vanilla

1 tablespoon brandy, optional

Directions

 

In a 9 inch pie pan or a 7 x 11 inch pan, combine graham cracker crumbs, sugar, and melted butter. Mix with a fork and press firmly in the bottom of the pan.

 

In a small non-stick skillet, melt chocolate chips over the lowest heat. Meanwhile in a food processor, blend tofu, honey, powdered sugar, vanilla, and brandy. Blend until very smooth. Add melted chocolate and blend again until smooth. Pour into pan. Cover and refrigerate.

 

Note: The pie is wonderful served with mint ice cream.
