Dietetic Internship Curriculum:
Food Service Administration
(13 Weeks)
The food service administration experience consists of the following five rotations lasting a total of 13 weeks:
- Patient Dining Services (2 weeks)
- Food Production (3 weeks)
- Cafeteria/Retail Sales (3 weeks)
- Supervisory Management (3 weeks)
- School Nutrition (2 weeks)
During these rotations, the intern participates in:
- Forecasting patient and cafeteria meal services
- Purchasing through submission of formal and informal bid processes
- Production of food by hot-hold and cook-serve food systems
- Patient Dining Service, including tray assembly and delivering quality improvement
- Retail cafeteria and vending operations, including marketing and food service in multiple locations
- Catering functions throughout the Clinical Sciences Center
- Supervisory management - Functions as a supervisor in an assigned area
- School nutrition - Works with the School Nutrition Food Service operation in a local school district
