Fruit Cobbler

The Go Red Makeover Challenge brought together three women from the Madison, Wisconsin area to learn about heart disease and what lifestyle changes they can make to prevent it.

 

During the challenge, the participants came together to prepare and enjoy a heart-healthy meal, including this delicious fruit cobbler dessert.

 

Fruit Mixture

 

Ingredients

 

4 cups of fresh or frozen, unsweetened fruit

1 T. lemon juice

1/4 - 1/2 cup sugar, depending on desired sweetness

1 Tbsp cornstarch

Cinnamon, if desired

 

Directions

 

Combine all ingredients in a microwave safe casserole or bowl. Cook in the microwave for 3 minute intervals, stirring after each 3 minutes. Continue until fruit is bubbly and thickened.

 

Biscuit Mixture

 

Ingredients

 

3/4 cup white flour

1/4 cup oat four

1 Tbsp sugar

1 1/2 tsp baking powder

1/2 tsp salt

2 1/2 Tbsp canola oil

1/2 cup milk

 

Directions

 

Combine dry ingredients, stir well.  Add oil, mix in with a fork.  Gradually stir in milk to get a biscuit dough consistency.

 

Drop biscuit mixture on top of cooked fruit.  Bake in 350-375 degree oven for 25-30 minutes.
