Apricot-Balsamic Glazed Salmon
It’s summer, time to try a new recipe for the grill! This sweet-sour glaze is a welcome addition to baked or grilled salmon.
Ingredients
- 1/4cup apricot preserves
- Two T. balsamic vinegar
- 1 tsp. finely minced fresh ginger root
- 1 clove of garlic, crushed
- 1/8 tsp. salt
- Two (six-oz.) salmon filets, skin removed
Instructions
Heat oven to 425 degrees or preheat grill. In small saucepan, heat preserves, vinegar, ginger, garlic and salt over low heat three to four minutes or until slightly thickened, stirring occasionally. Remove from heat, and cool slightly.
Place salmon fillets on baking sheet, top with glaze, bake 10-12 minutes or just until salmon begins to flake. If using the grill, make a "pan" out of heavy duty aluminum foil, place the fish in the pan, top with glaze and grill for 10-12 minutes or until fish flakes. Fish placed directly on the grill may fall apart and be difficult to handle. Makes two servings.
