Lunch bag

With a few simple ingredients you can make a healthy and delicious lunch that's sure to please.

 

Trail Mix
2 cups any type of cereal
1 cup small shredded wheat
½ cup peanuts or any type of nut
¼ cup dried fruit
*Avoid giving nuts or dried fruit to young children. It may be a choking hazard.

 

Humus Dip
1 large can chick peas
1 tsp olive oil
½ tsp sesame seeds

Freshly ground pepper
1 large clove garlic, minced
2 Tbsp lemon juice

Drain peas and blend them in a food processor. Combine the blend with the other ingredients and process until smooth. Serve chilled. This can be a dip or spread.

 

Crisp Tuna Salad
6 oz. can tuna, drained and flaked 
½ cup finely shredded carrots 
½ cup finely chopped celery 
1/3 cup mayonnaise 
½ cup potato sticks

 

Combine all of the ingredients except the potato sticks in a small bowl and mix well. Pack into an insulated lunch box. Package potato sticks separately to sprinkle over salad just before eating. Makes four servings.

 

Easy Fruit Dip
8 oz. package cream cheese, softened
16 oz. marshmallow crème
1 Tbsp maraschino cherry juice

 

Place cream cheese and marshmallow cream in a microwave-safe bowl. Place the bowl in the microwave, and cook on medium-high for 20 second increments until softened. Stir cherry juice into the cream cheese and marshmallow crème mixture. Cover and refrigerate until chilled.
