Kale may look intimidating when you see it in the grocery store or Farmer's Market, but the dark, green leafy vegetable, along with its cousins brussel sprouts and broccoli, contain antioxidants, vitamins and even calcium. These super-charged health foods can be delicious and an easy addition to your daily diet.

 

Kelly Hora, certified acupuncturist with UW Health's Integrative Medicine program, offers these variations on a kale salad. Simple to prepare, you can keep a bowl and eat it throughout the week for your lunch or as a side dish with dinner.
